Beef Lettuce Boats
Ingredients:1 Tbsp coconut oil1/2 sweet yellow onion, chopped
1 clove of garlic, chopped or pressed
Organic/grass-fed ground beef- make as much as you want to eat, or double that to eat later) 1 Tsp Paprika (per 8oz of meat)
¼ Chili powder (per 8oz of meat)
Salt & Pepper to taste
3-6 Romaine lettuce leaves1/2 an avocado, sliced (per 8oz of meat)
add diced bell peppers and/or hot sauce of your choice to taste (I use an organic chipotle habanero sauce liberally)
- Pre- heat a
skillet with the coconut oil in it to melt.
- Sautee onion
until clear and edges of the onion are brown, then add garlic and ground meat
to the pan.
Add spices while the beef is cooking
and cook mixture until the beef is no longer pink.
Add more oil if you find that the pan
looks dry or ingredients are sticking at all.
While beef mixture is cooking, rinse
lettuce leaves and arrange on a large plate. Cut your
½ and score it while still in the skin,
then scoop it out with a spoon so it’s
to top your beef.
When the beef is finished cooking, add
hot sauce to taste if desired, then spoon into
leaves on the larger/greener end. Top with avocado.
To eat, fold the whiter stalk end over
the end with the filling and make a little wrap, enjoy!
